Ingredients
14 oz microwaveable broccoli florets
5 green onions, roughly chopped
2 small cloves garlic, minced
1/2 cup finely grated Parmesan*
1/4 cup all-purpose flour
1/2 cup seasoned panko bread crumbs
Salt and cracked black pepper, to taste
1 large egg
1/2 cup (3 oz) Cotija cheese, crumbled

Instructions
Cook Broccoli: Microwave the broccoli florets according to package instructions until tender.
Prepare Mixture: In a food processor, combine in this order the cooked broccoli, green onions, garlic, Parmesan, flour, panko bread crumbs, salt, pepper, and egg. Pulse until well combined, with a somewhat smooth yet textured consistency.
Add Cotija Cheese: Add the crumbled Cotija cheese to the mixture and pulse briefly or fold in with a spatula to incorporate. Ensure there are some chunks of Cotija remaining for added texture.
Form Patties: Scoop out approximately 1/4 cup of the mixture for each patty and form into balls. Place them on a greased baking sheet, then press each ball down gently with a fork to form a thick, pancake-like shape.
Add Cooking Spray: Lightly spray the tops of the patties with cooking spray.
Cook:
Air Fryer: Set to 400°F and cook until crispy and golden, about 10–12 minutes, flipping halfway through.
Oven: Preheat to 400°F and bake for 30 minutes per side, or until both sides are brown and crispy.
*Use a Microplane grater to get the best texture and distribution of Parmesan.
