Crispy Polenta Cakes

Polenta is a popular side dish in Italy, typically made from leftover polenta that is then fried. This is a healthier and easier alternative to fried polenta, but just as delicious! Crispy on the outside and creamy on the inside, this is a great side dish to enjoy with just about anything.

Ingredients

•1 Italian herb flavored polenta tube*

•1 TB olive oil

•1/2 tsp Garlic powder

•1/2 tsp Onion powder

•1/2 tsp Paprika

•1/2 tsp Dried thyme

•Salt and Cracked black pepper to taste


Instructions

1. Preheat oven to 400°F

2. Dry the polenta tube with a paper towel

3. Cut the polenta into quarter inch rounds

4. Oil and season the polenta

5. Bake for approximately 20 minutes on each side or until they crisp up.
