Fried Egg Spaghetti

This is one of my go to pasta dishes for when I am craving a simple yet delicious meal! Fried eggs also make the perfect excuse to have pasta for breakfast!

Ingredients:
•1 pound spaghetti
•1/2 stick butter
•3 large cloves garlic, minced
•1/2 tablespoon coarsely ground black pepper
•2 cups grated Pecorino cheese
•1/3 cup pasta water
•Cooking oil
•6 eggs
•Grated Parmesan cheese (for sprinkling)
Instructions:
1. Cook the spaghetti according to the instructions on the package. Reserve 1/3 cup of pasta water before draining the pasta.
2. In a large skillet, melt the butter over medium heat. Add the minced garlic and coarsely ground black pepper to the melted butter. Cook until the garlic is fragrant.
3. Once the garlic is fragrant, add the reserved pasta water to the skillet. Stir the mixture and then remove it from the heat.
4. Quickly add the cooked pasta and the grated Pecorino cheese to the skillet. Stir vigorously until the cheese is melted and the pasta is coated in a creamy sauce.
5. In a separate skillet, heat some cooking oil over medium heat. Fry the eggs over easy in the hot oil. The egg whites should be fully set, and the yolks should remain slightly runny.
6. Add the cooked eggs to the pasta, gently breaking the yolks to allow them to mingle with the creamy sauce. The pasta should have delicious bits of fried egg in every bite.
7. Finish by topping the dish with more grated Pecorino cheese or Parmesan cheese according to your preference.
