This easy cheesy corn casserole is a great side dish. Mix the ingredients, bake, and enjoy!
Ingredients
•1 (11-ounce) can corn, drained well
•1 (14.75-ounce) can creamed corn
•1 (8-ounce) container sour cream
•1 large egg, lightly beaten
•1/4 cup chives, chopped
•1-2 jalapeños, finely chopped
•1/2 teaspoon garlic powder
•1/2 teaspoon paprika
•2 TB salted butter, melted
•1 (8.5-oz) package Jiffy corn muffin mix
•1 1/2 cups shredded sharp cheddar cheese, divided
Instructions
1. Preheat oven to 350 degrees. Grease a 9x13-inch casserole dish. If you use a smaller dish you will have to bake it longer.
2. In a large bowl stir all the ingredients together and pour into the casserole dish.
3. Bake for 45-50 minutes or until golden brown and set in the middle.
