Lamb Gyro

This Greek inspired dish is my version of the classic lamb gyro.

Ingredients

1 TB olive oil

•2 shallots, thinly sliced

•2 cloves garlic, minced

•1 lb ground lamb

•1 TB Za’atar seasoning

Pitas

Salt and pepper


Mint Yogurt Sauce

•16 oz greek yogurt

•3 oz fresh mint leaves, finely chopped

• 4 oz crumbled feta

•1 clove garlic, minced

•1/2 large lemon, juiced

•dash of cayenne or paprika(optional)

•salt and cracked pepper to taste


Instructions

1. Add oil to pan, turn heat to medium high. Add Za'atar to oil and toast for 30 seconds or until fragrant.

2. Add shallot and sauté until tender and golden brown. Add garlic and cook until fragrant.

3. Add ground lamb to pan with onion and garlic, cook until the meat is browned all the way through.

4. Combine Mint Yogurt Sauce ingredients in a bowl and mix until creamy.

5. Toast pitas

6. Add mint yogurt sauce on toasted pita and spread evenly. Add lamb mixture and top with more seasoning to taste.

7. Garnish with tomatoes and sliced shallots.
