Potato Chips

Homemade potato chips are so much better than the kind you buy in the store. There's nothing more disappointing than opening a bag of potato chips only to find two loose chips and a pile of greasy crumbs. If you've ever had homemade potato chips, you know they're totally worth the extra time and effort.

Ingredients

•3 large Russet potatoes

•3 cups vegetable or canola oil

•1-2 tablespoons salt(to taste)

•1 tsp garlic powder

•1 tsp onion powder

•1 tsp cracked black pepper

•1/2 tsp paprika


Instructions

1. Peel and slice potatoes using a mandolin for 1/16 - 1/8 of an inch slices.

2. Add potato slices to a large bowl. Cover potatoes with ice and water. Allow to sit for 30 minutes in order to remove the surface starch.

3. After 30 minutes, rinse off the potato slices in a colander, get as much of the water out as possible.

4. Line a single layer of potatoes on a paper towel lined dish. Use another paper towel to pat the top of the potato slices dry. Remove the dry slices from the paper towel and add to a bowl. Repeat with the rest of the slices.

5. Heat the oil to 350°F in a large deep skillet.

6. Working in batches, add one layer at a time of potato to the hot oil and cook for approximately 3-4 minutes stirring often with a slotted spoon until they brown.

7. Once they've browned, remove the chips and add to a paper towel lined plate.

8. Mix seasonings and and evenly sprinkle chips with mixture.

9. Allow to cool in a single layer to prevent them from becoming soggy.

10. Let cool before storing in an airtight container.
