Refried Beans

These refried beans will effortlessly elevate any gathering and are the perfect companion for your taco nights!

Ingredients
•2 cans (15 oz each) refried beans
•4 oz diced hatch chilies (mild or hot)
•1/2 tablespoon fajita seasoning
•1 tablespoon neutral oil (such as avocado, canola, or vegetable)
•1 teaspoon chili oil (optional)
•3 tablespoons sour cream
•2 cloves garlic, minced
•1/4 cup finely chopped cilantro
•5 ounces Cacique Cotija cheese
Instructions
1. Preheat the oven to 400°F
2. In a mixing bowl, combine the refried beans, diced hatch chilies, fajita seasoning, neutral oil, chili oil (if using), sour cream, minced garlic, and finely chopped cilantro. Mix thoroughly until all ingredients are fully incorporated and the mixture is smoothed out.
3. Transfer the bean mixture into a baking dish, spreading it evenly to create a smooth surface.
4. Crumble the Cacique brand Cotija cheese over the top of the bean mixture, ensuring even coverage.
5. Place the baking dish in the preheated oven and bake for 20-30 minutes, or until the cheese on top turns a golden brown color and the edges of the casserole are crisping.
6. Once done, remove the beans from the oven and let it cool slightly before serving.
7. Serve the Refried Beans with Cotija Cheese as a delicious and flavorful side dish for taco night!
